BBQ Chicken Pizza

This reminded me of California Pizza Kitchen's BBQ pizza, but we liked it better because the flat bread kept it from being so filling (we like thin pizza crust anyway)! This is definitely now on the top of our make-again list!







Wanted to have a visual on the exact ingredients I used!


Ingredients:

whole wheat tortillas (or flat bread)
cooked, chopped boneless, skinless chicken breast (I used 1 pkg of boneless, skinless ckn tenders)
BBQ sauce
Shredded cheese (the original recipe called for Gouda, but I used the kind in picture above)
red onion, thinly sliced & cut in slivers
fresh cilantro chopped

Instructions:
1. Preheat oven to 425 degrees
2. I seasoned my chicken tenders w/ s&p, garlic salt and brushed them w/BBQ sauce, baked them for 20 minutes & shredded them beforehand
3. Place tortillas on pan (I used my pampered chef bar pan, but you could use a cookie sheet...may need to spray it first?)
4. Spread a little BBQ sauce all over the tortillas (use this instead of pizza sauce)
5. Toss shredded chicken with a little more BBQ sauce; divide chicken among tortillas and sprinkle each with cheese & onions.
6. Bake for 5-7 minutes until cheese melts & tortillas are lightly browned.
7. Remove from oven & sprinkle with the cilantro.

Slow Cooker BBQ Pulled Chicken

Got this recipe out of the August issue of Eating Well magazine. This was easy & good!

1 8oz can tom sauce
1 4oz can green chiles, drained
3 TBS cider vinegar
2 TBS honey
1 TBS sweet or smoked paprika*
1 TBS tom paste
1 TBS Worcestershire sauce
2 tsp dry mustard
1 tsp ground chipotle*
1/2 tsp salt
2 lbs boneless skinless chicken
1 sm onion finely chopped
1 clove garlic, minced

(*side note on these ingredients: I found a McCormick spice called "Perfect Pinch" Southwest Sweet 'n Smoky. This one ingredient had both the paprika & chipotle in it & worked great)

1. Stir tomato sauce, chiles, vinegar, honey, paprika/chipotle, tomato paste, Worcestershire sauce, mustard, chipotle seasoning and salt in a slow cooker until smooth. Add chicken, onion & garlic; stir to combine.
2. Put the lid on; cook on Low until chicken can be pulled apart, about 5hrs.
3. Transfer the chicken to cutting board & shred with fork. Return to sauce, stir well & serve.

I served this on those whole wheat sandwich thins with a little shredded cheddar to help tone down spiciness, but my girls were able to eat it, so it wasn't too spicy.

BBQ Chicken Sandwiches

This is from Real Simple Magazine --
I am not sure this is even considered a "recipe" since you don't do any cooking to make it, but it is a super easy dinner that everyone in our family ate, so I thought that deserved a post.

1 rotisserie chicken
1/2-1 cup BBQ sauce
Hamburger buns or sandwich rolls
grated cheddar cheese (optional)
small can of chopped jalapenos (optional)

Take all rotisserie chicken off the bone and put in large bowl. Add BBQ sauce until it is the consistency your family likes (I used 1/2 cup so it wasn't so saucy). Transfer chicken mixture to saucepan and heat until warm. Spoon onto rolls/buns. Top with grated cheese or chopped jalapenos if desired.

Tom Perini Meatloaf

Since I'm in the mood to post poor man recipes :) here's another.
First let me say that growing up I was not a fan of meatloaf (sorry Mom); but since my sister told me to try this recipe, I now find myself fixing it for our family! I think the trick is in the bacon & bbq sauce...this ain't your everyday meatloaf!

Ingredients:
2 lbs lean ground round or chuck (I often pair this recipe down and only use 1lb)
1 lg baking potato grated (I've made it w/& w/0 potato--I've also used hashbrowns instead before)
1 medium onion, chopped
1-2 cloves garlic
2 C chopped fresh tomatoes (or a can of them drained)
1 red or green bell pepper, seeded & chopped
1 jalapeno, seeded & finely chopped (fyi--instead of this or the above 2 ingredients, I substituted in mild rotel)
2 tsp prepared mustard or 1tsp dry mustard
1 TBS worcestershire sauce
1 tsp salt
1/2 tsp fresh ground black pepper
1 egg, beaten
3-4 strips bacon
3-4 TBS picante sauce or tomato sauce or BBQ sauce!! (highly recommend the bbq!)

Instructions:
Mix all ingredients, except the bacon & sauce, in a large bowl.
Form into a loaf shape in a shallow baking pan.
Top with strips of bacon & the sauce
Bake at 350 for an hour (check to see if it's done, it may need to cook a little longer)

Sweet BBQ Shrimp

Yea, my first post. I have cooked this for a number of people all loved it so I hope you do to.

Ingredients
2 pounds large shrimp, uncooked, pull the skin and tail off
1 finely chopped onion
1 cup olive oil
1tsp sugar
1tsp cayenne pepper
1/2 tsp salt
1/2 tsp oregano
1/4 cup maple syrup
optional a pound of bacon ( I get the maple kind to go with the maple syrup)

Directions
In a large bowl, mix everything together(except bacon) then add the shrimp. Leave it in the fridge overnight or at least for several hours. Flip occasionally to distribute shrimp marinade (I did not do that). Pull out from fridge an hour or so beforehand to let things warm/loosen up a bit.
Preheat your grill while skewering the shrimp. I wrapped the shrimp with bacon ( I cut the bacon in half so all I need was one package of bacon) then skewered them but the recipe says opposite. Be careful about flames from the dripping marinade and bacon. (You really have to watch them and turn them often.)

Barbecue-style Pork Chops

These are a hit with everyone in our family! Enjoy!

6 center cut pork chops
1 Tablespoon vegetable oil
1 14 1/2 oz can whole tomatoes, crushed
1/2 cup ketchup
1/4 cup brown sugar
2 Tablespoons Worchestershire sauce
2 Tablespoons prepared mustard
1/2 teaspoon salt

Preheat oven to 350 degrees. Brown chops in oil. Drain, then place in greased 13x9 baking dish. Combine remaining ingredients and spoon over chops. Bake for 45 minutes. Great served with mac & cheese!
