O.k., I'm just putting this one on here to "try" this thing out.
My sister just sent me a recipe for baked oatmeal. I haven't tried it yet,
but I want to--I love breakfast and this one you make the night before
so it'd be ready in the morning!
Baked Oatmeal (make the night before)
1/2 C vegetable oil
3/4 C sugar
2 eggs
1 C milk
1/2 t salt
1 T baking powder
3 C oats
1/2 C raisins (opt.)
2T brown sugar
1/2 t ground cinnamon
Beat together oil and sugar; mix in eggs and milk. Combine salt, baking powder and oats; add to batter. Beat well, stir in raisins. Pour into lightly greased 9x13 casserole dish. Sprinkle with brown sugar and cinnamon. Cover and refrigerate overnight. Next morning, uncover and bake at 350 degrees for about 35 minutes (until firm). Great served with butter melted in warm milk or cream. *Can reduce oil amount in half and sugar to 1/4C if desired.
We had this when skiing. No raisins and blueberries on top. Pretty tasty oatmeal! :)
